Hello hello! I've got a really delicious fish taco recipe for you!! I was really craving sushi tonight but my wallet wasn't so I picked my next favorite type of food - tacos!
The sauce makes these. I also totally meant to add shredded cheese and I forgot. Sad. Clearly didn't notice much! But If you make these I would suggest the cheese. The recipe makes two hearty tacos.
Taco Ingredients:
- 1/2 green pepper sliced thinly
 - 1/4 cup sliced red onion
 - 1/2 cup black beans drained and rinsed
 - 1/4 avocado
 - 1/4-1/2 cup sliced romaine lettuce
 - Kosher salt & pepper
 - Trader Joe's Taco spice mix (or any taco mix!)
 - 1 cod filet
 - 1 tablespoon olive oil
 - 2 tortillas (I used La Tortilla light flour tortillas)
 - For the yogurt sauce:
 - 1/2 cup low-fat greek yogurt
 - 2-3 tablespoons sriracha
 - 1 tablespoon lime juice (I squeezed a fresh one so this is a guesstimate)
 - 1/2 tsp kosher salt
 - 1/2 teaspoon garlic powder
 - 1/2 tsp taco mix
 
Directions:
- Heat half of the olive oil in a medium pan
 - Cook the peppers and onions on medium heat until cooked through but still a little crunchy - place in a bowl to the side
 - Pat cod filet dry and season with salt and taco mix - place in heated pan with other half of oil
 - Cook for about 6 minutes - As it cooked it became flaky and I forked the fish into small pieces
 - Set to the side and make the sauce by combining all of the ingredients and stirring until smooth
 - Heat the tortillas
 - Place fish on the tortillas and top with veggies, beans, lettuce, avocado and yogurt sauce and give everything an extra spritz of lime!
 
These are so good I already decided I am making them another night this week. Fish tacos remind me of vacation and I always kind of wish I was on vacation. Don't you?
