WIAW + Easiest Chocolate Chia Granola Recipe!

I totally meant to post this last Wednesday, but work was crazy and then I left early Thursday morning for a weekend of training and learning in Boston! And then Sunday I was exhausted and took naps instead of posting. Anyway, I still wanted to share what I've been noshing on lately! I also have a super easy granola recipe to share. 

Breakfast

A big ole' bowl of oats with almond milk, banana, walnuts and raspberry preserves! This week I've been loving the savory breakfasts though - eggs, Canadian bacon and sweet potato.

Snacks

After having a few training sessions, I scarfed this PB & J before my own workout for some quick energy...

Lunch

Lunch of tuna salad, veggies, avocado, olives and feta! Also had an apple on the side.

Dinner (at work)

Roasted sweet potato, jalapeño chicken sausage and brussels sprouts.

Snacks

I also had one of my Apple Cinnamon Raisin Muffins and when I got home from work a bowl of greek yogurt with banana and the delicious granola recipe I'm about to share. I'm always hungry!

Giant Green Smoothie Bowl + RAW Proteins Giveaway Winner!

YO! I have another smoothie recipe to share with you AND the giveaway winner for my Garden of Life RAW Protein & Greens giveaway!  I did NOT think this smoothie was going to taste good at all, but it ended up being probably my favorite smoothie bowl recipe to date! This smoothie has at least 3 servings of vegetables. 3 SERVINGS!! In one drank. That's pretty solid.

Healthy Apple Cinnamon Raisin Muffins

Warm, dense, spicy and sweet...these Healthy Apple Cinnamon Muffins are the perfect treat on a chilly morning or a wonderful snack when you need a boost of wholesome energy!

These muffins are so delicious. They're not too sweet and they each contain only 150 calories, 3 grams of protein and 3 grams of filling fiber. I made them to have on hand for snacks this week, but lets be real, I've been eating them with my breakfast.

I used a mixture of whole wheat flour, all-purpose flour and coconut flour, which gave this recipe a real hearty and dense texture. Don't get me wrong, I love a light and fluffy muffin, but I wanted a little more substance here with the whole grains and coconut flour!

I used a Macintosh apple because they tend to be a bit softer, but any apple would work! Just chop it up real small - you could even grate it. I'm just not fancy like that. But I did use fancy caster sugar, thanks to Michael's mom who got it for me for a gift! Caster sugar is a finer sugar, so it dissolves more evenly. It's wonderful for iced teas or meringues. Or these muffins! ;)

Serve these puppies with a schmear of buttaaa! You're livin'.
