Since March I was planning to go home to surprise my grandpa for his 75th birthday, with high hopes of pulling through with the surprise, but what was I thinking?! Of course my family can't do surprises. 

I flew home to Florida last weekend and as I was getting of the plane, my sister calls me from Israel, literally across the world to talk to me and the first thing she tells me is that my grandpa knows and the surprise is no more. Awesome. And my sister of all people who wasn't even in the country tells me! I think my family was going to try to play it off to make me feel better. Although it was ruined, it was still a blast. It's such a treat to go home to sunny florida and soak up family time, beach time and pool time. Happy birthday Poppies, I know you're reading this! Yes, I still call my grandpa Poppies. In fact, the whole family does.

It was back to the grind this week! Can I just say how much I love my job again. I actually can't quite call it a job when I get to train freaking awesome people all day and teach group fitness. What is life?! I'm so grateful.  I had a client last week touch her toes for the first time ever in her life and she was so happy that she cried. And then I almost cried. Definitely one of my top trainer moments so far and I haven't been doing this for that long. This is why I get so excited to go to work everyday. It's the best.

Chocolate Porter Whole Wheat Banana Bread

Okay guys, after I made Chocolate Peanut Butter Porter Boozy Brownies (like literally, right after - I was baking for hours), I saw two spotty bananas in my fruit basket that just had to be eaten, and I created this Chocolate Porter Whole Wheat Banana Bread. It's a little bit healthier than my brownies, but still freaking delish. 

This Chocolate Porter Whole Wheat Banana Bread is insanely moist, fluffy and delicious without all of the refined sugars and fat! The beer gives the bread a light and airy feel, while the peanut butter, whole wheat flour and banana adds some hearty nutritional value. The bread is topped off with some semi-sweet chocolate chips, of course, to satisfy that sweet tooth.

Again here I used DuClaw Brewing Co.'s "For Pete's Sake" Imperial Chocolate Peanut Butter Porter. Yes, this is my third recipe with beer - what can I say, I LOVE BEER!

Apple Gingerbread Muffins Inspired by TheLeanGreenBean.com

Happy Monday! I'm especially chipper this morning. I taught my 6 a.m. spin class this morning and I'm off to work (for a very long day) but this is my last full week of work before I get to go home to Florida for a much needed little break. I cannot wait to get back to the sunny 85 degree weather (although this weekend in Philly was warm!!) and spend a lot of time with the family. 

This past weekend was great - I didn't get home until around 7:30 on Friday night and had zero energy to do anything, but I woke up refreshed on Saturday morning. I taught a great Super Circuits class at Sweat Fitness, ran some errands, baked and relaxed. My ideal Saturday. Saturday night Michael and I went to a Christmas party with a lot of his Men's Health co-workers. A little too much alcohol, pizza and chips called for a very lazy Sunday, which I had no problem with :)

So Rachel from athleticavocado.com put together an Epic Roundup of Healthy Gingerbread Recipes where I found this amazing Pear Gingerbread recipe made by Lindsay from theleangreenbean.com! I just had to make it. I used Lindsay's recipe as a guide, but I did have to adapt it because I do not have a loaf pan in my new apartment yet, I didn't have any white whole wheat flour on hand (aka Lindsay's recipe is a tad healthier) and I didn't have any pears. SO, I worked with what I had to create these Apple Gingerbread Muffins. They came out incredible, so I bet that Lindsay's Pear Gingerbread recipe is out of this world.

[yumprint-recipe id='10'] I LOVE these. I've never been one to use ginger a whole lot in my baking  and cooking, but it adds SO much flavor. It will definitely become a staple from now on! This recipe is very easy to throw together, and the yogurt icing is so delicious! I used plain greek yogurt, some powdered sugar and some vanilla extract.
