Giant Green Smoothie Bowl + RAW Proteins Giveaway Winner!

YO! I have another smoothie recipe to share with you AND the giveaway winner for my Garden of Life RAW Protein & Greens giveaway!  I did NOT think this smoothie was going to taste good at all, but it ended up being probably my favorite smoothie bowl recipe to date! This smoothie has at least 3 servings of vegetables. 3 SERVINGS!! In one drank. That's pretty solid. 

I've been using Garden of Life's new RAW Protein & Greens mix for my smoothies and it includes clean, wholesome, plant-based protein along with a mixture of organic veggies.

If you haven't tried adding sweet potato to your smoothies, you're missing out! It adds such a delicious natural sweetness and thickens the texture.

These muffins are so delicious. They're not too sweet and they each contain only 150 calories, 3 grams of protein and 3 grams of filling fiber. I made them to have on hand for snacks this week, but lets be real, I've been eating them with my breakfast.

I used a mixture of whole wheat flour, all-purpose flour and coconut flour, which gave this recipe a real hearty and dense texture. Don't get me wrong, I love a light and fluffy muffin, but I wanted a little more substance here with the whole grains and coconut flour!

I used a Macintosh apple because they tend to be a bit softer, but any apple would work! Just chop it up real small - you could even grate it. I'm just not fancy like that. But I did use fancy caster sugar, thanks to Michael's mom who got it for me for a gift! Caster sugar is a finer sugar, so it dissolves more evenly. It's wonderful for iced teas or meringues. Or these muffins! ;)

Serve these puppies with a schmear of buttaaa! You're livin'.

Healthy Asian Turkey Stir Fry

Happy Tuesday :) Since I've started at my new job, meal prep has been very important because I eat pretty much every meal but breakfast at work. However, I steer clear from eating the same thing every day or else I get bored and I crave things like Rita's (which is right across the street from the gym) or all the chocolate and french fries. Variety is the spice of life!! So in attempt to make my ground turkey and rice more exciting, I created an asian style stir fry that I served with Trader Joe's Jasmine rice, which is probably my favorite rice right now. So tasty and comforting.

It's really the spices that make this dish! I used the simplest ingredients. Serve on top of a bed of steamy Jasmine rice and top your dish with some Sriracha, soy sauce, chopped cashews and green onions.
