Choco-Coconut Superfood Bites

She put the chocolate in the coconut, she ate 'em all up. That's how that song goes right? Chocolate & coconut > lime & coconut. For sure.  When I was at the Garden of Life Blogger Summit back in May, I met Sophie Jaffe, a Cali-based yogi and creator of Philosophie superfood products. She was kind to send me some of her products to try out and I have to say her Cacao Magic Superfood Blend is delicious!! Especially for baking and making energy bites. I try to make a batch of energy bites or protein balls every week for when I need a quick little pick me up and for something sweet after lunch or dinner (let's be real, this is the main reason).

At the Garden of Life Blogger's Summit I also learned the key to making these energy bites from Moreya's FitBites demo...always use boiling water!! It breaks the oats down so you end up with a truffle-type consistency. It makes all the difference!

These lil' things are truffley, chocolatey, nutty and filled with superfoods. In addition to the superfood blend, I used chia seeds for an extra superfood kick and of course chocolate chips, the superfood of all superfoods. You could totally just sub in chocolate protein powder or regular protein and some extra cocoa powder for the superfood blend.

No-Bake Banana Pecan Protein Bites
 

Good morning :) Just some #MondayMotivation for ya...I started off today by teaching a 6 a.m. spin class and now I'm waiting for the train to work! A 5 a.m. alarm every Monday morning might make ya cringe, but teaching this class is one of my favorite parts of the week. There's something about starting the week off by putting smiles on other's faces and being the reason why they get out of bed to start the day. I wouldn't trade it for the world. Find what it is you're passionate about and get after it. image

Want a healthy snack that tastes like cookie dough? Don't we all! This is a really easy no-bake protein recipe that you can throw together in just a few minutes! Each bite has 135 calories, 5 grams of protein and 9 grams of healthy fat. 

proteinbitesheaderThese protein bites are perfect before or after a workout - they're easy to grab on the go. There's also something about pecans that always give a dish - sweet or savory - a decadent touch. Do you agree? Maybe this it's because I worked in a fish market/dessert counter (yes fish & dessert in the same vicinity) at a restaurant all through high school and whenever I would grab a new pecan pie from the freezer, I would grab any pecan scraps that were left in the box after I sliced it. And oh my goodness - that pie was incredibly rich. Isn't it funny how different foods or smells can bring back such distinct memories?

Anyway, the pecans in this recipe do add a nice touch and complement the banana quite nicely!

How's everyone's week going? Over here it's been crazy busy, which is a great thing, it just leaves me a little less time to focus on my blog. Over the weekend I went to DC and Virginia to visit with Michael's family and it was such a nice little get away! It's so comforting to hangout with family that feels like my own away from home. The weekend involved a lot of down time, some mini golf, GREAT food and even better company. Plus that AMAZING Gator win over Tennessee. That was awesome. I didn't want to have my phone out snapping pics all weekend so I have nothing to show you there. 

On another note...tomorrow is OCTOBER. HOW?! I'm so excited for the weather to start cooling down! There's lots to look forward to for the rest of this year and so much just in this month. All but just one weekend in October is already dedicated to friends and travel! Gotta love that. The last weekend in October is the Philly Rock 'n' Roll half marathon...only four weeks away! Let's pray for zero annoying minor injuries in these next few weeks...
