Skinny Spinach, Bacon & Corn Saute´

Happy St. Patty's Day! I've got a yummy recipe for you. Last night I made this spinach, corn and bacon dish along with some grilled chicken for a really flavorful and healthy dinner. The bacon and corn add a lot of flavor! The thing with cooking and what you'll see in this blog (once I get more recipes posted) is that everything I make on a week day or night has to take less than 30 minutes. I don't make anything fancy schmancy but I like it to taste fancy schmancy.

  • 1-2 tablespoons olive oil
  • 1 shallot
  • 3-4 cloves garlic
  • 1 red bell pepper
  • 3/4 cup sweet yellow corn (I used frozen)
  • 4-6 cups roughly chopped spinach*
  • 2-3 slices bacon
  • 1 teaspoon each of salt & pepper
  • Mrs. Dash garlic & herb seasoning (can also use regular garlic powder)

Directions:

  • Chop shallots, garlic, pepper and spinach

  • Add oil to medium pan and bring to medium heat
  • Add garlic, shallots and pepper and cook for about 5-7 minutes or until the pepper becomes slightly tender

  • While the above is cooking, place the bacon on a pan to bake in either a toaster oven or oven. Bake on 350 degrees for about 5-10 minutes (this really depends on your preference of how crispy you want your bacon!)
  • Add in spinach, corn and seasonings to pepper mixture and stir frequently while spinach wilts
  • Once bacon is done, pat off oil, chop in small pieces and add to spinach
  • Turn heat down to low and cook for 1-2 more minutes before serving

Halfway Through March? #TBT

Gooood afternoon! This morning started with a HUMID three mile run and the usual breakfast of eggs, bacon & fruit. I can tell that summer is nearing in Florida.

Today feels like a Friday for me because tomorrow I'm heading up to Auburn University with my co-workers at the gym to attend the Evolve Fitness Conference!  I'll have a recap post up about the whole conference up after the weekend. Don't get me wrong, UF's gyms will always be my absolute favorite but I am SO excited to see Auburn's recreation facility, which is always ranked among the top in the nation.

Anyway, can we just stop and think for a hot minute how it is already halfway through March?! There's a month and a half left of school. In light of graduation right around the corner, I would like to do a quick #tbt and reflect on how awesome this entire year has been.

For one, I took a cross country road trip to Los Angeles before moving to NYC last summer for an internship. That was quite a crazy summer! One for the books. I might be back there this summer. IDK. Who knows??

And there was my last time going to Florida home games as a student. I will be back. My sister (chica with me in the above Brooklyn Bridge photo) got into UF and will be moving here in the summer. That's four more years that I can come back and pretend to be a student! #ItsgreatUF. ALWAYS.

And just recently for spring break I was lucky enough to visit two new cities I had never been before, D.C. and Philadelphia. They're both awesome. Soon I will have a spring break post to share!

I feel really grateful for all of the opportunities that have come my way. I tend to get stressed a lot on a daily basis with everything I have going on currently (school, job, internship,) but I know that everything I am doing is for a reason. I'm so ready for this last month and a half of school. Hopefully by May 2 I am employed. I just keep telling myself that the big things always work out. Isn't it true?

I am so excited to start this blog and really focus on promoting what I love! A Healthful Heart will be a place for me to entertain, inform and inspire a balanced lifestyle by sharing my own knowledge and experiences. I can't wait to share everything that fuels me, including workouts, recipes, travel tips, fashion and the beginning of my professional career. This girl is currently looking for jobs and I think that being able to use A Healthful Heart as an outlet will help guide me through the ups and downs of landing that first job (hoping that it won't be too stressful, but come on, how can you combat the threat of unemployment after graduation!?)

My goal for A Healthful Heart is to relate to readers by writing about pieces of my own life. The past year has been a huge whirlwind of personal growth and I am honestly upset I didn't take the time to start this blog earlier as a way to document my time in college. It's never too late to start anything, right?!
