Chocolate Chia Granola PERFECTED!

YO! I posted a granola recipe a few days ago and then I made it again and it came out better the second time after I tweaked some things!  But first, happy Thursday! We're almost to the weekend. Almost there. I feel like this week just flew by insanely fast and last week was the total opposite. I think because last week I was just exhausted! On Saturday after work I just passed the hell out for about three hours and I feel like those three hours caught me up for the entire week ahead. Is that possible?? 

Anyway, I've been loving this granola recipe and I wanted to stress just how EASY it is to make this and other snacks to have on hand. I have a few clients at work who have been asking about nutrition lately, and the biggest thing I've noticed is that there's a general lack of knowledge about really how easy it is to meal prep a bit to avoid eating packaged shit. You guys, it's SO EASY! Just don't be lazy. Take a couple hours on Sunday and make a bunch of food. That's it. No need to get all crazy and measure out every little ounce into tupperware, just make a big batch of the foods you love so that you have them ready for the week to grab when you need! 

Meals

Carb sources: Rice and sweet potatoes. Rice takes like 15 minutes to make. Poke some sweet potatoes with holes, wrap in tin foil and bake for an hour. BAM you have healthy, already cooked complex carbs for the week! 

Protein sources: Chicken, fish, ground turkey. Bake your chickens and fishies and/or sauté a package of ground turkey. Easy! 

Veggies: Chop some raw vegetables for snacking A.K.A celery, carrots, peppers. Roast a big pan of vegetables (great combo = brussels sprouts, peppers, mushrooms) and then keep in the fridge for the week. 

Snacks

Chopped raw veggies, hard boiled eggs, homemade granola (see below :) ) , homemade protein bars or bites, fresh fruit with plain greek yogurt...the list goes on! 

So please stop spending a ton of money on fancy protein bars and high-end, organic granola when you can make it yourself. Look how delicious it looks! And it is!

One step in making this granola is major key. When you take the granola out of the oven to cool, scatter a few chocolate chips on top. They will melt and when you mix it all up to transfer to a container, the chocolate will harden and make little chocolate clusters. MAJOR KEY. This morning I topped it on some FlapJacked protein pancakes for some crunch...

Toasted Coconut & Banana Protein Pancakes + A Taste of The Poconos

Hey there! How was everyone's Labor Day weekend?

Mine was great - considering the awesome protein pancakes recipe I'm about to share with you :) On Friday evening, Michael and I headed up to the Poconos to stay with a couple of our friends at their house. I had never been up there before and it was just beautiful. So peaceful, quiet and we couldn't have gotten more lucky with the weather. I don't have many pictures because I wanted to disconnect a bit this weekend from technology. On Friday night we sat on the porch and had a few too many drinks in the cool weather. We had intentions to get in a workout Saturday morning, but instead we slept in and drove up the road for a diner breakfast - you know, the greasy kind that cures all feelings of a hangover? So great.

After getting some food in our bellies, we geared up for a full day at the lake with a huge cooler filled with LOTS of beer and snacks. We got to the lake and headed into the water for a full day of floating - with our floating cooler. We swam (floated) all the way to the other side of the lake and back, and didn't get out of the water for a good 3-4 hours.

Obviously in Gator gear for an awesome Gator win on Saturday night! Full of beer and all sunned out, we headed back home to relax and grill a delicious dinner of chicken, asparagus and zucchini. 

We headed back to Philadelphia yesterday late morning. Today has consisted of lots of relaxing! I got in a great workout earlier, mostly because I had all the time in the world and didn't have to rush! I love that, don't you? I'll post my workout later this week - it was a sweaty one! Now we're just enjoying being lazy (aka blogging + watching Arrested Development the rest of the day) before getting back into a busy working routine tomorrow.

Before working out, we woke up slow and I wanted pancakes, but after a weekend full of not the healthiest meals, I wanted a healthier version - cue the homemade protein pancakes! These are easy to make and if you're one of those "ew cottage cheese!" people, I'm sure greek yogurt would work just as well :)

Chocolate Chip Oat Pancakes

Happy Sunday! I've got a super easy pancake recipe for you today - Chocolate Chip Oat Pancakes!

Processed with VSCOcamIngredients: 

  • 1/2 cup oats
  • 3 tbsp coconut flour
  • 1/2 cup milk
  • 1 egg + 1 egg white
  • 1 tsp chia seeds
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • Chocolate chips (however many you desire)
  • Honey or syrup for topping (I also added a little peanut butter)

Directions: 

  • Place all ingredients into a blender and blend
  • Warm a greased skillet (I used butter - you can use cooking spray as well) on medium-low heat
  • Pour a fifth of the batter on the skillet to make a small-medium sized pancake (I was able to fit two pancakes on the skillet at once)
  • Let cook for about 5 minutes on each side
  • Repeat with remaining batter
  • Stack em' up and bon apetit!

Going to get in a Sunday sweat sesh soon, do my grocery shopping, clean up and get ready for a work Banquet tonight! I always love Sundays because they are the perfect amount of productive and lazy. I've got an exciting week ahead - last FULL week of school (how the heck did that happen?) and someone special is coming to visit! Stay tuned...
