Crazy Simple Lemon Dill Salmon

Hey guys! How was your Monday? Mine was super busy but went by so fast and I can't believe it is already 9 p.m.! I taught two classes today, a cycle class and a Total Body class, so when I got home tonight I needed a big yummy dinner.

I have been crazy about dill this week and putting it on my salads every day. Tonight I made a dill lemon salmon that was delicious and ridiculously easy!

  • 1 salmon filet (I use the frozen filets from Costco - easy)
  • 1/2 teaspoon each of kosher salt & pepper
  • 1/2 teaspoon of garlic seasoning (I use Mrs. Dash garlic and herb)
  • 2 slices of lemon
  • Fresh dill to your taste

Directions:

  • Pat salmon dry and place on greased pan
  • Sprinkle with kosher salt, pepper and garlic
  • Place dill on salmon, as much as you want!
  • Place lemon slices on top
  • Bake in a 400 degree heated oven, or if you have a toaster oven, place it in the toaster oven and bake on 400 for 15 minutes. Turn your oven or toaster oven to broil for an extra 2-5 minutes
  • Enjoy!

PB & J Oatmeal

Good morning, Throwing it back a little bit with a PB&J combination!

    • 1 cup almond milk (or any milk)
    • 1/2 cup rolled oats
    • 1 teaspoon chia seeds
    • 1/3 cup raspberries
    • 1-2 tablespoons of peanut butter (I never measure - a hefty spoonful works for me!)
    • 1 tablespoon raspberry preserves
    • 1-2 tablespoons granola (not necessary - just for some extra crunch)

Directions:

  • Bring milk and chia seeds to a boil
  • Add in oats and cook on medium
  • Once oats begin to absorb the liquid add in raspberry preserves and stir
  • Cook about 5 minutes until all liquid is absorbed
  • Add PB, raspberries and granola on top
  • Stir it all up and bask in the deliciousness

Chicken Sausage & Ricotta Frittata

Good morning! I've got an eggselent frittata recipe to share. This is perfect to make ahead of time and have for breakfast for a few days or a great brunch recipe! It's easy like this wonderful Saturday morning.

I'll admit I got a little heavy handed with the cheese! Eggs and cheese are a match made in heaven, though, so I can't be blamed. Worth it. This tastes heavenly. P.S. you could make it a little lighter by substituting some of the eggs for egg whites or cutting out some of the cheese. Ingredients:

  • 5 eggs
  • 2 tbsp ricotta cheese + 1 Laughing Cow creamy swiss wedge
  • 4 maple chicken sausage links diced thin (I used Trader Joe's brand)
  • 1/2-1 cup chopped spinach
  • 1/4 cup chopped green onions
  • 1/4 cup Mozzarella cheese
  • 1-2 tbsp goat cheese crumbles
  • Teaspoon each of kosher salt and pepper

Directions: 

  • In a medium bowl, whisk together eggs, ricotta cheese and laughing cow cheese
  • Add in chopped spinach, sausage, green onion and seasonings
  • Preheat a small skillet on low-medium heat and spray with cooking spray
  • Preheat oven to 350 degrees
  • Pour egg mixture in skillet and let cook until the edges are set
  • Sprinkle Mozzarella and goat cheese on top and place in oven
  • Bake until the top of the frittata is set and edges are golden brown (should be about 15 to 20 minutes)
  • Let cool and serve!
